When I was at University I was the only girl in my course of 50 people. Luckily we shared lectures with other, similar courses which had a few more girls. It never really bothered me and it can be a plus since people are more likely to remember your name! Mechanical engineering is definitely a really strong degree to do as it'll give her a wide range of potential jobs in lots of different industries. So I'd definitely encourage her to stick at it. If she is finding it hard as the only girl she could perhaps investigate whether there are any female STEM groups at the University, or start her own! I hope that helps.
